If the server is Windows 2000 Server then the only way to acheive higher that 256 colors in a session is with the addition of Citrix MetaFrame and the ICA Client. If the server is Windows Server 2003 then all you need is the Remote Desktop Client, available here:

Well it's getting late here and I'm tired, so forgive me if what I'm about to say is just plain wrong, but I seem to recall you need a fairly new RDP client (ver 5+?) and obviously the server console needs to be set to a higher colour depth.
