Display Names in OL2007

In OL 2002, email names could be displayed in an email without the @ISP.
When a contact was set up, there was "a display name as" field under the
address. How can you do this is OL 2007?
 
Because although the name is listed correctly in the contact, when I click on
the "send email" from the contact it is listed with the @isp.

Default Email-DisplayAs format for O'2007 is -FullName (email address) -
unless you type in something different. Is that what you're referring to
when sending an email. (location of EDA field on form is different in O'2007
(left side) then O'2002 (right side)) - not to mention that the value of the
EDA field changes whenever the email address is modified.

But you can change the Email Display As field to the familiar name if that's
what you prefer.
