Display email address as ....???

I just added a couple of new contacts. The Display Email Address As
field appears like this: FirstName LastName (email@wherever). I do
not want the email address to be visible in the Display. I know
there's a setting to change this, but I can't seem to find it. Can
someone help?

Simply remove the email address from the display name field.

After furious head scratching, (e-mail address removed) asked:
