Difference betwen linked table and exorted data

we have some software containing contact information. I have loaded the
information into Access to scrub it before loading the data into Outlook
Contacts.

While testing, I exported some contacts out of a Contact folder to see what
fields are available. about 100 or so fields are available.

from Access I created a table link to Personal Folder/Contacts. about 50 or
so fields are available.

from Access I created a table link to Address Book/Outlook Address
Book/Contacts. about 28 or so fields are available.

Questions
1.) how come all three produce a different quantity of fields?
3.) in Contacts I can see the Category field. how come the Exported data is
the only version that contains the field Category?

The linked table method has major limitations, including the inability to
show even all the reasonably important fields. While articles have been
written on how to expand on this method's obvious features, I've never been
able to duplicate the results. See

Each different type of table has its own set of linked fields.
