I don't know about the difference between those two but a year ago I built a
new pc with two DDR3 2GB paired kingston modules. Didn't get a stable
configuration. Bought another MoBo still unstable no matter what I did.
Ditched on of the two modules than the second MoBo became more stable. I
still regretted the lack of the additional memory (and it wasn't comppletely
stable either). So I bought two OCZ DDR2 modules, overclocked just a little
bit and the system is running quite stable in ducal channel mode with 3.2GB
or 4GB (depending on OS). It is certainly not slower. Back then the DDR3 was
just a waste of money (also oddly enough it has disappeared from the MB's
QVL completely). And yes, this is a MoBo that can handle both DDR3 and DDR2
(the first one a gigabyte could only handle DDR3).
Don't know if things have improved. For my current configuration even though
I bought about the fastest HD (within my price range) and used striping
(which might or might not improve performance). I think the bottleneck
nowadays is more the communcication with the disks (I.e. load time of games
or when a lot of files get accessed like when compiling a large program).
