How do I change the default dictionary from English us to
English australia? When I am typing a new email I clik on
the english us at the bottom. It gives me the option to
choose my default dictionary but when I want to send a
new message the dictionary is back to the us one!!

Please help!

Assuming you are using Outlook 2003:

Tools > Options> Spelling and look for "International dictionaries" at the
bottom.

No it is 2002 but I have checked this and it says
australia but then i go to new message and it says us!
AHHHH very annoying!

Because you changed the dictionary used ONLY for that particular e-mail
message. You changed a setting local only to that instance. If you
want to change the *global* setting then don't be changing it while
writing a new message (where that "local" setting is effective only
during that instance of the new message).

With no new new message windows open (or, NOT from within a new message
window and back in the program's actual toolbar):

Tools -> Options -> Spelling
 
I tried it as well. It says australia!! That is what is so annoying because I can see it but it doesn't work!

What do you have select as your location? US or Australia?

I have had exactly the same problem with UK English. I am
using Outlook 2003 and Office 2003. I use Word as text
checker and have set up (a)my location as UK (b)Word as UK
English and (c)Outlook as UK English.

Still the bloody thing come up with US English by default.

This is American imperialism (and inability to spell
properly)- clearly a bug unless some kind soul will tell
us have to kill US English
