How do I stop the Dial-up connection menu from appearing
on screen when I don't need it.

You provided no information that would allow us to answer. Provide your
Outlook version, mail account type, connection type, automatic polling
settings and what action provokes the unwanted prompt.
 
As a suggestion
Open Internet Explorer, click on Tools, Internet Options,
then click on the Connections Tab.
Make sure that "Never dial a connection" is marked

That will only control the behavior of the IE dialer, not Outlook. Outlook
will still prompt to connect when you've configured it to do so. We need to
know the Outlook settings here.
