The reason your shortcuts disappeared from your programs list is because the
default action is to 'move here' rather than to 'copy here'

To copy them back right click on start, choose 'open all users'
Your are here: C:\Documents and Settings\All Users\Start Menu
In there double click on 'programs' where you will find the programs list
for 'all users' go ahead and drag your desktop shortcuts in there.

This time RIGHT CLICK and drag the short cut. When you release your mouse
button you will see a menu which gives you the option to 'copy here'.

Ctrl/Z would have replaced them at the time, but it's probably too late now.
