DEP stops me from accessing Control Panel, My Computer, etc.......

How can we turn this thing off? It is disrupting and the security is overkill
for most computers in the office.

You have malware on your computers. The symptom is the continual occurence
of DEP.
I have DEP enabled, but does not prevent me from accessing any of the
features that you mention.

Something installed on your system isn't working properly and is causing
these DEP errors, either a 3rd party tool or a driver. Rather than turn
off a useful feature you might try looking for the problem to see if you
can fix the fault "properly". As Jim notes, this could very well be a sign
that you have a malware problem on these machines (that being one of the
3rd party tools that can cause this problem), and if that turns out to be
true that would kinda put paid to the idea that this setting is un-needed
and "overkill".

It's a pain in the butt to look at it this way I know. I won't deny my
answer will take much longer than turning off DEP, but you might be better
off in the long run. Much the same as dealing with an oil leak warning
light on your car by finding and fixing the leak instead of just covering
up the dashboard with duck tape until you can't see the light gleaming any
longer...

I'm always surprised at "professionals" who STILL have to be asked:
"Have you checked (event viewer / syslog)".

Read - something that Microsoft didn't write.

as is this "feature. rather than fix the problem, ie WINDOWS just crap
on all other software.

Or you could try building a car that doesn't leak to start with!
 
The old car (Windows 2000) worked fine and didn't leak. I used it until it
ran out of support from peers etc.

I hope activesync 3.8 is not doing this!
