Deleting email from an IMAP inbox

I've recently set up a pc, using outlook from OfficeXP, with an IMAP email account.

On this pc, when emails are deleted or moved out of the Inbox, they remain shown there but with a
line struck through them. It seems that this is in case I later want to "undelete" them.

HOW do I TOTALLY delete them like I can with POP3 inboxes?
 
The strikethrough is characteristic of remote connections. It indicates the
message will be deleted from the server next time you connect.

Now if Micro$haft could write software where I can see ALL the pull down menu items ALL the time
(and not just those few that Micro$haft in their wisdom think I'd be interested in) then I would
have seen that and not neede to ask the question.

Why do they hide most of the menu options all the time?

How can I have them ALL automatically show ALL the time (without having to click again to get them)?
