Delete contacts in drop down window when sending email

Hi can someone please tell me how to delete contacts in the drop down window
when sending an email?
Example is when entering an 'A' in the sto column all the contacts with 'A'
appear. I would like to know how to delete the contacts I no longer use?

When you start typing in the address. use the arrow key to select the
address and press delete.

Whilst the email address is viewable, press the "Delete" (or "Del")
key.
