I have noticed every so often that client default printers change. Say they
have a choice of 3 and there is one that is the default it will mysteriously
change to the next printer. I have not found anything posted about this
anywhere. Any information would be greatly appreciated.

What kind of printers are these?
Local client printers, which are redirected into the session?
Shared network printers? Printers installed directly on the TS?

What are the client connection settings with regard to printers? Have
you checked the box "default to main printer"?

Are users logging in simultaneously from more than one client, using
the same account?

Most of the printers are hp deskjets range anywhere from 600's to 960c, also
laserjet 4, lj 4050.

Most of the connections are local client printers setup as shares and then
installed the printer on the terminal server. A couple use remote desktop
connection printer connections.

Most users log in from the same clients.

This happens very rarely when the defaults change. It could be after a
reboot and may not be after a reboot. There are also a couple of other
printers that are installed in the printers folder Microsoft Office Document
Image writer, and also faxmaker.

OK, just a few comments:
When a user profile contains connections to several printers, and
the default printer fails to redirect for whatever reason, another
printer is made the default printer. I think that this is what you
see.

As for the reason, I can't really help. I have no experience with
your setup. It is not necessary to share local printers and then
install them on the TS, all local printers should be autocreated
within the session.

If you enable logging of printer messages, the EventLog should
give you more information about what is going on.
