How can I change the default paragraph setting for my documents without
changing it manually everytime? The line spacing setting is set to 10pt
spacing after every line. This drives me crazy. I don't remember ever
having this kind of default for Microsoft Word 2003.

Thank you!

You didn't. You can modify the Normal style just as in former versions, or
you can select Word 2003 as the style set and set it as the default. Or you
can change the document defaults and write the change to Normal.dotm: In the
Styles pane, click Manage Styles, select the Set Defaults tab, and for
+Body, change the paragraph spacing settings and select the radio button for
"New documents based on this template."

If this is for Word 2007:

In the "Home" tab "Paragraph" group click on the dialogue box launcher
(bottom right corner of group)

Make the changes you and click on the default button.
