I am creating a custom form and want to be able to set the phone fields which
are displayed by default to Business, Business2, Home and Mobile. These are
the ones that I shall use most and would prefer not to have to change the
display every time I create a new contact.

I am an experienced user but do not do programming.

Did you display those fields before you published your custom form?

I didn't do that. I guess just to display those four individual fields I
remove the phone fields and phone selector and add them individually. But I
would like to keep the phone selector and change the display on the odd
occasionin the form if I need to. How do I do this? When I look at the
properties for field the value if Phone 1 Selected - no mention of the actual
field name.
Confused.

No, it's not that hard. Just select the field you want in each of the four phone selectors before you publish the form.

I’m sorry to be dense here but I can’t see how to do this. Can you give me
the steps?

You already have a published form, right? Run it -- in other words, create a new item with it. Save that item as an .oft file to make a backup copy of your form. Set the phone selectors on that item the way you want, then use the Tools | Forms | PUblish Form command to republish the form.
