De Modifying Outlook Forms

A few years ago I developed some elaborate contact forms. I want to simply
them, remove fields, etc. I have two questions.

1) How can I rename or remove some of the 'tabs' on the Contact form??
2) How can I (should I?) eleiminate all the fields and variables I do not
need now.

Can anyone out there help me??
