Data image copy pc to pc

I have a number of old hard drives with programs, games, I would like to
save disk images to a modern pc in case of drive failure.
These drives are MFM and IDE/XT hard cards that I use with XT type machines,
it may seem silly, but I'm having fun.
The thing is, these drives use ISA controllers, and I can't seem to use more
than one drive in any of the machines, so I would like to use maybe
interlink from Dos 6.22 and xcopy, but I haven't figured what switches to
use to get the programs to actually work on the new drive, they seem to
copy, but some won't function.

Thats doable but its done differently to
how its done with modern IDE drives.

You cant do it that way.

Ghost will copy drives that way. Its dirt cheap if you
get it as part of SystemWorks Pro 2003 off ebay etc.

That would likely be the simplest approach.
