I have stumbled on an issue that only one or two others seem to have noticed, and thought I would also provide the answer! If you customize Outlook Today 2000 to the Winter scheme, the "Customize Outlook Today" button is not shown, so you cannot change it to a different scheme
The answer
Type Alt-u and the button appears in the bottom right
Bizarre..
:-)

Known issue and you gave the answer yourself already ;-)

It all depends on your screen resolution. Using a 10x7 display will always
show it unless you have added days (via the registry) to the number of days
Outlook Today displays by default.
