Customising the Appointment Form

I have read all the stuff that says you cannot customise page 1 of the
Appointments form, so I have started to create a new form (page 2) which I
will activate, having hidden the built-in form. I am doing this as there is
just too much information on Page 1.

It works fine except for the date and time. When the form is called from a
particular day on the calendar the date shown for booking is correct. What I
want to do then is have a drop-down of specific times (reflecting the
period/lesson times of my school day). Unfortunately, because, as far as I
can see, the built-in fields "Start" and "End" include both date AND time,
when someone picks a time from the drop-down, the system assumes it means
TODAY, rather than the day they are trying to book for, and changes the
booking date! How do I get round this?
