You can save a chart template in PPT 2007. Format the chart the way you want
it, then on the Chart Tools Design tab, choose Save as Template.

When you're ready to use it the next time, Insert | Chart and choose
Template in the dialog box.

You can save templates for each chart type, or just make one or two, then
insert it and right-click and Change Chart Type. I think that will work --
but I haven't tried it lately, so I'm not 100% positive.

You can probably also save a small gradient swatch as an image and then fill
the chart series with that -- basically you'd be filling the series with an
image. I'm not sure how well it will tile and stuff, though -- might take
some experimentation. (You can make the gradient in PPT and right-click and
Save as Picture. I'd probably go for PNG. Here are instrux for creating
gradients in PPT 2007: http://www.echosvoice.com/2007_tutorials.htm )
