My work week spans two time zones. One Mon, Tue and Fri I work on Indian time
zone and on Wed and Thu I work on Pacific time. Is there anyway I can reflect
that in my calendar?

No. But you can use dual time zones.

if you use outlook 2007, when you create the appointment you can select the
time zone the appointment is supposed to be in - click the time zone button
on the ribbon.
