Is there a program that would enable me to create a single contact-sheet of
thumbnails of all of the images in a hierarchy of subfolders, in one
operation?

Firegraphic does this very slick.

Just select "Print", "Contact Sheet", then drag the folder hierarchy onto
the print box.

You can drag a single photo from anywhere, a single folder, or an entire
folder tree.

You can choose the image size from postage stamp size to quite large.
