In Word 2003 I was able to copy to the spike, look at the spike contents and
delete. Is there any way of doing this in 2007?

(Almost) the same way as before: Ctrl+F3 to add to it, Shift+Ctrl+F3 to
insert it. Looking at it is more awkward - you can see it - but not really
read it - in the Building Blocks Organizer, or it does appear in the
AutoText Gallery but you must add this to the QAT (Office Button > Word
Options > Customize tab > All Commands > AutoText > Add), or you can invoke
the old dialog with VBA (Dialogs(wdDialogEditAutoText).Show).
