First of all, I am not on a server so sharing calendars is not an option.

I want to be able to copy all appointments/events from another person's
calendar and put them on my calendar without overwriting my own information.

Is this possible?

Have your colleague create a new .PST file on his/her machine, copy all
calendar items to it, then close that .PST out of Outlook and send it to you.
Once you get it, put it somewhere easy to find on your hard drive, then open
it in Outlook using File | Open, and copy the data to your own Calendar
folder.

Won't that just bring up a second calendar in my Outlook? I'd like for them
to show in my current calendar. Is there a way to do that?

When the copy completes, you can right-click on the extra PST and choose
Close to remove it from Outlook.
