If you are using the new Personal Folder (PST) structure, you will need to
copy/export the items to a Outlook 97/2002 Personal Folder store. Once
done, use the mail applet to delete any existing mail profiles when all mail
enabled applications are closed.
From there it is a matter of performing a full uninstall of Office 2003 and
installing Office 2000. Just make sure that when you create a new account
in Outlook 2000 that you use that Outlook 97/2002 Personal Folder store.
