How do I connect visiting computers to our office domain
without having to change anything in the visiting
computer? If I change the domain then the user can't
access his own stuff on the computer.

You should not adjust anything unless you expect the changes to be permanent
in nature.

Alternatives you can do is (and would be based upon what you are allowing
them to do on your network).

1 - leverage terminal services/ remote desktop
2 - allow the user to have access to resources via a shared/guest level
account
...etc

What kind of scenarios are you expecting to offer for a "visiting" computer?

So you mean that if he logs on his own computer by f ex
Diego I should make a guest account on the server with
that login name? He needs to access our fileserver and
also the printers on the network.

First question, why is this visiting computer not a part of your enterprise
domain?

If there is a justified reason for this case, you have (as noted previously)
options. Why not let him use a guest terminal at your location that way you
can have more access control on the network and related corporate resources.

First of all, he is a consoultant helping us develop our
ISO system so he is a member of his own domain at his
company. When we change domain he can't access his mail
and such. He needs his computer because he has some
programs that he uses on that computer. Licence matter.

By your continued efforts of changing his domain, you are causing various
ACL problems in addition to other issues which you are clearly encountering.

As previously stated you should really consider providing him another method
to access files / resources on your domain (e.g. terminal services to a
company resource in your domain). It is clearly less painful than the
approach you are taking. Of course you could set up a trust relationship
between your firm and the consultant company.

Your call.
