Configure Outlook to Store Attachments separate from Mail

We are wondering if there is a way to configure outlook / Exchange to store
attachments separate from the mail. We are currently using Eudora to
download our mail and it stores the attachments in a separate directory from
the mail folder - this allows for better incremental backups.

It is our understanding that backing up outlook will require copying a
single file that contains all attachments and previous mail messages - we'd
like to avoid this. We are aware that there are backup products that exists
that allow you to incrementally backup mailbox files - we'd like to see if
there is a way to avoid buying one of these packages to keep our costs down.
This is why we are asking the above configuration question.

Neither Outlook nor Exhange has any such option, but there are add-ins that can extract attachments automatically. See http://www.slipstick.com/addins/housekeeping.htm
