Concatenating Multiple Worksheets

Is there a way to concatenate data from several sheets so it appears
continuous on a line chart? Here's the scenario:

Each sheet has one year of data, date in col. A, value in col. B. There
are about 250 rows per sheet. I want to create a line chart where the
X-axis (date) spans consecutive years along with the associated Y values.

Can this be done without copying all the data to a single sheet?

In an XY chart, you can add data from multiple sheets to get an end to
end sequence of series. Make a chart from the first sheet's data, copy
the second sheet's data, select the chart, and use Paste Special from
the edit menu to add this copied data as a new series. Repeat for the
rest of the sheets. This produces one series for each sheet's data.

You cannot get data from more than one sheet into a single series, so
you can't make a good Line chart this way. The chart ignores the X
values for subsequent series, and reuses the first series' X data for
all the rest.
