This is going to seem completely crazy, but I know there is a lot of
knowledge in this newsgroup about lots of different things, but what does
that piece of card inside a microwave oven do? I ask simply because mine has
fallen off and I'm wondering if it is important to the microwave functioning
healthily (in terms of mechanically and in terms of the health of the people
who eat the food that is cooked in it!).

It's probably still the lid from your last frozen TVdiner ..... not
important at all.

It makes the microwave look pretty/finished inside and keeps
bubbling/splashes off the magnetron. Since that's where the
microwaves enter it's necessary to use a non-metal and (being in a
microwave) heat resistant material.

It is a mica window that stops steam and splashes of food getting inside the
Magnetron and stuffing it up ( making it arc over) mica sheets for this
application should be available from spare parts shops ( at least they are
here in Australia)
Mind you I need to Add a warning here ---
MICROWAVE OVENS GENERATE AND STORE HIGH VOLTAGES INTERNALLY
DO NOT OPEN ONE UP UNLESS YOU KNOW WHAT YOU ARE DOING AS EVEN IF IT IS
UNPLUGGED IT MAY STILL CONTAIN ENOUGH CHARGE TO KILL OR CAUSE SERIOUS BURNS.
