Is vista compatible with server 2000? Can I used vista on one computer in my
network and XP Professional on my other systems? If not what upgrades would I
have to do to my other systems?

Windows Vista from a networking perspective is entirely compatible with
Windows 2000 Server.
There are no problems using XP on one machine and Vista on another in a
Windows 2000 environment.

I use Windows 2003 for the server, and Vista on my workstation machine.
I would use Vista as the server too, but I don't know if I can set it up as
a domain controller.
Maybe with the non-consumer Enterprise version?

Vista is a client/desktop OS, not a Server OS. You would need a Server OS
to run as the DC. Until the next version of Windows Server is released
(Longhorn Server in beta), you would best stay with Server 2003.
