I was hoping there was a way to increase the height of just the column titles
(not all the rows). And is there a way to do text wrapping for the titles?

If you are talking about queries or forms being displayed in DATA SHEET view
then the answer is that the capability to do either does not exist.

You can use a continuous form to display the data and when you do then you can
do both.

Do you mean in Datasheet View?
Sorry, that is not available.

Use a Form in Continuous View instead of Datasheet View. You can size
the column header labels however you wish, and if the label is tall
enough, text will wrap.
With a bit of practice you can have the form appear quite similar to a
Datasheet.

Thanks both for your help! How do you create a "continuous" form or view a
form in "continuous" view. It doens't seem to be a choice in the forms or
views.

Open the property sheet for the form, choose the Format tab. The second row,
Default View, is where you can set Continuous view.
