Can you have more than 256 in color depth from a client
connection in terminal services? And if so, where do you
do it at?

On Windows 2003 - YES.
On Windows 2000 - NO - unless you run Citrix.

Controlling color depth is control via the
Remote Desktop Client - Options
(use latest version available from Microsoft's site).
