Is there a utility available that will check DDR RAM to see if it is
ECC or Non-ECC? Or is there any way to look at the RAM Stick and find
out this information?

Thanks.

The BIOS will tell you that ECC is available.

The BIOS is your best bet.

...isn't it also true that if your stick of RAM has an odd number of chips
then it is ECC (5, 7, 9, etc)? ...or is this not always true?

Yes it's true, nobody makes DRAMs with parity bits so DIMM manufacturers
have to add an extra x8 RAM.

The sticker (serial number, manufacturer, type etc) should say!
