changing the 'reply-to' and 'from' fields

I would like it for my email sent to look like it's from another
address, say '(e-mail address removed)', then the reply-to field to
be my personal email.

I know this is possible by modifying the header of the emails, but how
is this done within outlook 2000/2003? I'd like this policy to be
spread across all the office computers, even if it needs to be done on
a case by case basis.

Alternatively, is there a macro that i could write to do this everytime
a message is sent or is added into the outbox? what objects would I
need to manipulate? and how would I attach this macro to trigger on
this event?

What type of server? What types of accounts?
 
It's not a local server, we outsource our mailserver and we have
POP3/SMTP access with Outlook 2000 and 2003 (depending on which
computer). The server software is clearly limited in that regard, there
is no way to do it through the forms there.

I was really hoping it would be possible locally in outlook.

Easily done with a POP account. For Outlook 2003, click Tools>E-mail
Accounts>Next, select your account, and click Change. Set the sender
address to whatever you want using the E-mail Address field. Click More
Settings and make the Reply-To address whatever you want using the Reply
E-mail field.

For Outlook 2000 IMO mode, click Tools>Accounts, and, I think (it's been a
long time), select your account and choose Proerties for access to similar
values. For Outlook 2000 CW mode, click Tools>Services, select the Internet
Mail service, click Properties, and similat settings should be available.
