Changing location of mailbox

Ok, currently all of our employee's are using a 3rd party ISP, connecting
via POP3 and have their mailboxes on their local machines. Well, we're now
moving to SMTP and we want all of the employees mailboxes on the server.
So, how to we migrate the mailboxes from their local machines to the server?

Also, what is the best way to verify your email setup? Some sort of testing
plan?

This doesn't make sense. POP accounts use POP for receiving messages, but
they use SMTP for sending messages. You're already using SMTP. Moreover,
unless you're running an SMTP _server_ on your PC, you can't receive
messages via the SMTP protocols. Perhaps you mean you're switching to
Exchange or IMAP.
