Change User's Network Printers

We are bringing a new Win2003 file/print server online and I need to know
how to do the following. I know how to use the net use command to create
mappings but that doesn't apply in this case.

1) Delete specific printers available under users profile (these are
specified in the Printers & Faxes section) since the printers are now
located on a new print server. I don't want to delete any local printers
(printers physically attached to the machine), but do want to remove
printers for a specific print server
2) Add the new printers to a users profile so that it is available under
Printers & Faxes
3) After the above is accomplished how do I set the user's default printer?
