Change Outlook 2007 skins?

Hey all...
found the note on how to change the appearance of Outlook 2007 in help, but
I do NOT have that rounded office button to click on to open up the dropdown
that holds this "Editor Options" button...

so..how do I change the appearance and color ie the "skin" for Outlook 2007???

Jim,

This change will affect all of Office, so if you change this is in ms-word
(wich DOES have the rounded office button) outlook will change as well (as
will word / excel / etc.).

that's it -- christ, that's crummy!!!

is there no way to go to anything else - and is there a way to make the app
RUN as fast as word 2003 did....

???
