change one slide to different design if using design template

After choosing one of the design templates on PowerPoint, how do you change
just one side to not have that design template on it and create your own
design on it.
 
Details depend on what version you are using. If you are using 2003, you
have a few choices. The easiest is to go to that slide and choose
Background from the Format menu. Then check the box for Omit Background
Graphics from Master. Click Apply (not Apply to All). Then you can add
whatever graphics you want just to that slide. Alternatives include using
the multiple masters feature to make a totally new master for that slide,
but it is probably not worth it if you just have one slide.

Thanks, Dave - I had the opposite problem, and by checking 'Apply to all' I
removed the unwanted design.

Next - I want to put my own pictures as the background to the slide.
Different picture for every slide. How can I get the text to superimpose on
the p[icture?

If I understand what you want to do correctly, you want each slide to
have a different background picture. The easiest thing to do is in that
same Format > Background menu. At the bottom of the dialogue box, click
on the pull down menu (right above the check box for Omit background
graphics from master). Choose Fill Effects. Click on the picture tab and
select Select Picture. Alternatively, you could add a picture the normal
way, select it, and choose Draw > Order > Send to Back.
