Categories in Contacts

There is a Categories field in the Contact's Phone List but where is that
field within the Contact (ie. when double clicking and opening a contact)?

For Outlook 2007, open the contact then click Categorize on the RIbbon.
 
It is on the bottom right. Just click the button and you will see
a list of categories and options to create your own.
