Is there freeware that can capture screen and mouse activity into an AVI
file that I can use as a demo -- sort of like CamTasia?

CamStudio 2.0 could be the solution.
But it does not exists as freeware any more,
so using the WayBack maschine, here it is/was as freeware:

The couple of times when I'd tried retrieving a binary from the web.archive
cache, it failed (w redirect to an html page). Leading me to the hypothesis
that they do not store full binary files. However, that link above does
indeed seem to be fully functional. So must be time to revise my earlier
notion. As well, to maybe do the same as you, re-open a few of those hunting
projects that were earlier abandoned...
