Does anyone know how to turn on & off the Capilization
feature so that the light bulb turns on/off?

To turn off all style checking:
Go to Tools --> Options and select the spelling and style tab. To turn off
the lightbulb all together, uncheck the box for check style.

Two ways to turn off just the capitalization, but leave on the other style
checking:
Go to Tools --> Options and select the spelling and style tab. Click the
style options button. Uncheck the first two boxes. This will turn off all
case checking.
or
Click the light bulb when it appears. One of the options on Clippies list
should be "Ignore this option for this presentation". Select that option.

I believe that
Tools
AutoCorrect
AutoCorrect tab

Untick the "show autocorrect options buttons" I think turns off the light
bulb.

Also there are options to turn off the capitalization of first letters on
sentances etc

If that's not it, then try

Tools
Options
Spelling and style tab
Case and End Punctuation

Then read through the options for how the "case" is set to
