Can't edit my user-defined fields...

Hello - I've set up a couple of user-defined fields in Contacts, put them in
a form and published it in the Organisational Forms Library in my office.
Everyone else can now read the form OK, but some people can't actually edit
the data within the fields that are user-defined fields (although the other
regular fields are fine). All the users are defined as "Owner" on the
Exchange on the server, so I don't think that's the problem.... Any
thoughts?

What symptoms indicate that those fields can't be edited?
