How do I change a cartidge on an Epson Photo 1200 if the refill light isn't
flashing?
My nozzle check shows everything OK, except there is no yellow and I want to
print a picture of a bunch of bananas.

See Page 114 of the User Manual for the printer. It is explicitly
explained there.

You can read the manual on the Epson site, should you have lost it.

Here's a simple how to animation on the procedure for changing a cartridge
before the low level light is either lit continuously or flashing.

However, if you have always changed cartridges using the correct procedure
in the past it is unlikely that you are out of ink but instead have plugged
nozzles. I suggest you try cleaning them first. Here's a cleaning animation
using the printer control buttons

or software.

Once a cartridge is removed and reinserted it loses track of how much ink is
in cart. It will show full and go down but it isn't correct.
