I want to permanently change the default page size to A4 and media type
to plain paper so I won't need to change them every time. Is this
possible?

I'd have thought you could do that easily enough by going to:

START -> Printers & Faxes
Right click your MP500
Choose "Printing preferences"
Set your preferences
Click "Ok"

That usually sets the default settings for your printer for all
applications then.
 
I was talking about the standalone copy settings on the canon machine
itself without opening the PC. How could I change these?
 
No replies!! Seems as if it's not possible I also wish to change these
settings so the default is not photo size paper but more frequently
used A4. Dammed inconvenient having to setup each time you need to
copy, and wasted time and paper if you forget to change the
settings!!!!

Press Menu button
Select Maintenance/settings
Select Device Settings
Select Wireless Print Settings
change to your paper size and type
Select Save Settings

Try powering your printer off and back on.

Worked for me. (and no, it's not in the manual)
 
I had emailed Canon for support and they told me that I couldn't change the
default paper size and type for the COPY settings. Thanks to your sequence I
was able to work it out. I wanted to set COPY up for 8-1/2" x 11" plain
paper. The sequence that finally worked for me was:
Press COPY button
Press Settings button
Change paper size to 8-1/2" x 11"
Change paper type to plain
Print quality was standard, left it
Then--
Press Menu button
Select 'Maintenance/settings'
Select 'Device settings'
Select 'Save settings'
Press OK

Once I did this I could power down and power back up with the default that I
wanted. You are correct that this information is not in the manual.
