Can you *Fix* Tables?

I have been tasked with creating a set of forms to be filled in on the
computer by staff but my knowledge of Word (2002) is very limited.

I have been able to create the form OK by inserting an expanded single a 1 x
1 table with a Text Form Field inside for each topic/question. The problem
is that if the person types in an answer larger than the available space in
the table cell, the cell will automatically expand to accommodate this. The
trouble is that this then messes up the spacing on the muli-paged form. Is
there anyway of *fixing* the table size so that the layout of the form
cannot be changed?

Set the row height to an exact amount.

You can also explicitly set the maximum length of the text form field itself
if you need to control how much data the user is allowed to enter.
Right-click the form field and choose "Properties."
 
Thank you Suzanne, that worked - but then you knew that already didn't you.

I find that Excel does what I tell it to but Word seems to have a will of
its own. I am in a vicious circle with it, I am not very good in Word so I
avoid it and because I avoid it I am not very good in it.
