Can I retract (call back) an email I sent ?

If I sent an email to someone and i know they havent yet read it, and I want
to retract it how do i do that?

Depends. I don't know how to do it in an MS Exchange environment, where such
is possible. However, if you sent it outside of the Exchange environment, it
is just not possible at all.
 
You can't if this is not within the same Exchange environment.
If you are, double click to open the message from your Sent Items folder and
choose (Other) Actions-> Recall this message
