Last year I installed Vista (Ultimate) beta which, of course,
preserved my XP installation in "Windows old." Last week, I installed
the "real" Vista. It is working fine. Can I safely just delete
"Windows old?"

Thank you,

Maybe the following article will offer some ideas:

try to remove the $WINDOWS.OLD folder from
a computer that has been upgraded to Windows
Vista

Hi,

As long as there is nothing in it that you want to save, then the answer
would be 'yes'.

FWIW: I deleted it from my drive and it caused no problems...
of course make sure there's nothing in there you need!
