Can a single workstation participate fully in two domains?

As a part-time contract employee I have access to two different
networks, each with its own Domain controller, Exchange 2000 server,
etc. from my home via DSL. Is it possible to have the same
workstation be able to log into one network use Outlook, etc. and then
log off and dial into the other network and use Outlook over there as
well?

Not natively, but you don't even need third party software. You can always
log into one domain, and access resources on the other by providing the
proper credentials. I have heard some good stuff about the software Marina
mentioned, but I prefer to keep things simple myself. Your mileage may vary
:-)

That is what I have been doing until now. I just know that
collaboration works better when the Outlook client works like you are
there in the office.

But a Windows computer can't belong to more than one domain at a time,
natively - and as I've stated, the third party s/w is not necessary.
