Bob,
There really isn't any type of report writing functionality in Outlook yet.
What you could do is export your calendar to Excel, sort by Category and
Student, and then you would at least have the basics necessary to write
your report.
To export to CSV - File > Import > Export to a File > Comma Separated
Values > etc...

| I schedule all of my appointments on the Outlook calendar
