I have set up a shared calendar in a public folder on a
server running WS2003. How do I navigate to and therefore
share this folder from Outlook on a client computer on
the same network ?

Display the Folder List in the navigation pane, right-click the folder, and
then choose Add to Favorites. Outlook will automatically add the folder -
for example, a contacts folder - to the list of Other Folders on the
Contacts navigation pane.

Or just use the Folder List all the time.

I used to have a shared calendar in a public folder which
did indeed show up in the "Other Calendars" section.
However, I removed them unwittingly, and can't seem to get
them back. I've checked that they are listed as Favorites,
but they don't show up in the Calendar section, which I
really, really need. I am in the meantime using the
Ffolders pane to access them. Suggestions?

Display the Folder List and make sure the folder is listed under Public
Folders\Favorites. Then right-click the FAvorites copy and choose Add to
FAvorite Folders.
