Calendar & Contacts Disappeared

I don't know what happened but when I opened Outlook this morning my entire
calendar and all my contacts were gone. I tried several system restores -
those didn't work. I searched for archived material but came up empty. I
did find a .pst file in My Documents and opened it, but it was empty also.
Is everything truly gone or is it floating around in my computer somewhere
just needing the right key to unlock it?

What about your other folders, like Tasks, Journal, Notes, Inbox, and so on?
Since all your folders are kept in the same place, you can't lose some
without losing them all.

Naturally. System restores restore only system files, not application
files.
I searched for archived material but came up empty.

It has nothing to do with archives, most likely.

Did you use Control Panel's Folder Options to enable viewing hidden files
and folders before searching for PSTs?

I only have been using Outlook for calendar & contacts, so I am not sure if
the other folders would have disappeared also. I am assuming that they would
have also as the same thing happened to my boss several months ago. But I
was able to do a system restore on his computer and everything came back.
That's why I don't understand why my stuff won't come back. The only thing
that I did, was add a user but that shouldn't have deleted my calendar, it
should have just created one for the new user.

Not necessarily. I suspect that in the process you created a new mail
profile overriding the one you had. Examine Control Panel>Mail>Show
Profiles and see if there are more than one.
